Weekend Story: Family Outing + Work on a Sunday

Last weekend was super fun. Well, scratch that. The fun only happened on Saturday because we had a family outing. Sunday was a different ballgame. I had to go to work and though I was quite productive, lazing away on a Sunday is still waaaaaay better. Haha.

So, we went home in Bacoor with my in-laws on Friday night. The next day, Saturday, we woke up early, packed our things and drove to Kalipayan Hotel and Resort in Dasmariñas, Cavite. We got there at 7am-ish. After paying our entrance fees (P200 per head) and renting the same kubo (P600, good for 12 persons) that we stayed in during our previous visit last Holy Week, we started unpacking our stuff.

Cooking with Edel: Baked Lapu-lapu

This Baked Lapu-Lapu (or grouper in English) is inspired by the restaurant La Cocina de Tita Moning’s Baked Lapu-lapu Cooked with Olive Oil and Garlic. (I work there part-time so I’m unabashedly promoting it here on the blog, haha.) Proof to that is the use of bread crumbs to cover the top part of the fish. This tasty and flavorful fish dish will make you feel like a domestic diva. It’s so easy to make yet it is classy enough to be served during special occasions.

Ingredients:

500g lapu-lapu
10 pcs. calamansi (or 1 lemon)
olive oil
¼ cup soy sauce (optional)
bread crumbs
salt and pepper to taste
toasted garlic bits (prepared beforehand)
hot water
butter

Weekend Story: Laundry Day Saturday and Mother’s Day Sunday

The hubby and I were supposed to go home in Bacoor as early as Friday night last weekend. I was, however, asked by Mame and my sister Jodie to accompany them to the doctor on Saturday morning. They weren’t sick, though. They just wanted to have a check-up with a dermatologist for possible treatment of facial warts.

When Saturday came, Jodie got lazy to get up early and Mame suddenly asked to cancel our lakad at the last minute. I was a bit upset because they wasted my time but when Mame told me she’d join us in Bacoor and celebrate Mother’s Day with me, my disappointment went away.

Teaching Financial Literacy at Home

I grew up in a family where money is a taboo subject and financial education is never taught. I actually learned about such important concepts as personal finance and financial freedom through self-study. My mother, who was in-charge of budgeting in our one-income household when I was little, wasn’t really a good example when it came to managing our limited financial resources.

Back then, we were living from paycheck to paycheck and we were acquiring liabilities instead of assets. While my parents certainly did their best to provide for our needs, the idea of financial freedom was non-existent to them. Or maybe they knew about it, but it was just not among their top priorities.

Weekend Story: Crazy Busy Long Weekend

I didn’t expect that last weekend would be a crazy busy long one. Of course, I looked forward to the holiday which gave me an extra day to enjoy. But the summer heat was unforgiving and the hubby and I were out almost the entire long weekend doing things for ourselves, our family, and our friends. It was a hectic schedule but thank God we managed to do everything and still had fun in the process.

On Friday, the hubby and I, along with Mame, attended the christening of my newest godchild baby Yñigo Paulo, the son of my first cousin Mark. It was held at 11AM at the peaceful St. Arnold Janssen Shrine in Taytay, Rizal. Reception followed at Tender Joe’s Rancho Grill located beside a gas station along the highway, just a few blocks from the shrine.

Frugal Find: SM Woman Black Business Dress

While I don’t shop a lot (you might wanna read about my successful 11-month long shopping fast last year), I have this special shopping list in my head containing several “wanted” items. I have sworn to myself that I would not look for these stuff. If I’d see one accidentally, I’d buy it immediately (provided I also have money at the time). No questions asked. It’s like destiny, with the item and I being meant for each other.
